They grow the grass and then take a machine with a blade that goes under the grass and roots and into the dirt. They use that machine to cut the sod into strips. Those strips are then cut into more manageable mats that can be used on your yard. Because each mat has some dirt and its own roots, the grass should be able to survive until it takes root in your yard.
